All I Want for Christmas Hamper – Bollinger Edition Tequila wild fermentation in old barrelsBollinger is the Champagne for people who take their Champagne seriously. Where most houses moved to stainless steel decades ago, Bollinger still ferments a good part of the blend in oak barrels one of only two grandes marques that do which gives it real depth and a rounded, generous texture. It leans more heavily on Pinot Noir than any other major house and is aged well beyond what the rules require. Rich and characterful, it's a proper Champagne
